Ø For at least 4 recipes that require the liberal use of herbs & spices for flavoring, dish appeal and taste OR

Ø 4 Ethnically-influenced dishes that use herbs & spices preferred by a particular cultural or racial group.

2) After your research, prepare a short Write-up of about 250 words on your choice of ONE dish that requires more than two different herbs & spices.

3) State how the use of herbs & spices in your chosen dish can contribute to the distinct taste and appeal and list the many accompanying health and medicinal benefits for your body.

4) List at least three types of herbs & spices preferred by

i) Indians
ii) Malays
iii) Chinese
iv) Eurasian

5) For each of the herbs or spices mentioned in 4i to 4iv, give at least one reason for its frequent use by the various ethnic groups.


(III) Grading for Assignment: Write-up: 20 marks
Research Skills: 30 marks
Total: 50 marks
